Maple Syrup Season has Arrived!

Here in Threshold Forest, a time of year that is anticipated all winter - and even year-round - has finally arrived. It’s maple syrup season! Tapping maple trees is a productive tradition that contributes to sustainable use of forested land. Drawing sap each spring to make maple syrup presents no long term damage to the trees. Instead, land owners who are fortunate enough to have maple trees are more likely to keep their land wild and healthy so that they can tap their trees every year.

According to a recent CBC article, the perfect conditions for drawing sap involve “a temperature formula that fluctuates from about –5 C at night to 5 degrees during the day.“ We’ve had a few days of great flow where buckets fill more than once a day. Regardless of how well this season produces, every drop is a treat!
